What Do We Use To Cook On???

Most of you will be familiar with the 'normal' BBQs that most people use in the UK, the open top grill, cooking food directly over the top of the charcoal.
Every time the fat drips onto the smouldering charcoal, huge flames lick around the sausages and burgers above, coating them in a black residue?
Hmm, thought so..!
We don't use that method, and, although our BBQs can be used like that, most of the time they are used to cook the food indirectly.
